The Chthonic Winery is a Brooklyn-based natural wine project made in collaboration with growers and winemakers upstate — no tasting room, no estate, just a hands-on partnership built around a shared curiosity.
Our focus is ancient technique: flor yeast, reductive aging under olive oil, rancio character coaxed out through controlled light exposure, pomace wine (piquette, roman lora / greek thamna), and botanical wine pairings with a rich history like rosemary & thyme, elderberries, and pine needles — used the way winemakers relied on them for thousands of years before.
We're excited to explore the many facets of American Northeast native and hybrid varietals, and the terroir behind them, through these methods. That excitement comes with respect: the more we work with these ancient techniques, the more we learn just how chemically complex they are, and how they demand precise understanding of their interaction with other winemaking decisions for reliable results.
